  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil (or other neutral oil)
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven to 350°F and grease a 9” square baking dish with butter or oil.
  2. In a sauté pan, bring fresh apple cider to a boil and reduce by half for about five minutes.
  3. In a medium bowl, whisk eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well combined.
  4. Slowly whisk in the hot boiled cider into the egg mixture.
  5. Gently fold in flour until just combined—avoid overmixing.
  6. Pour batter into the prepared dish and spread evenly.
  7. Bake for 22–25 minutes until golden brown and puffed up.
  8. Cool slightly on a rack before brushing with melted butter and sprinkling with cinnamon-sugar.
  9. Allow to cool completely before slicing into squares.
