  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for filling)
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract (for filling)
  • Pinch of salt (for filling)
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract; mix well.
  5. Gradually add reduced apple cider and milk to the wet mixture.
  6. Combine dry ingredients with wet mixture until just mixed.
  7. Scoop tablespoon-sized portions onto a lined baking sheet and bake for about 10 minutes until golden.
  8. For the filling, beat together softened butter and powdered sugar until smooth; mix in reduced apple cider and caramel sauce.
  9. Once cooled, spread filling on one cookie half and sandwich with another.
