  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating
  • ½ cup unsalted butter (room temperature) for filling
  • 1 ¼1 ½ cups powdered sugar (sifted) for filling
  • 2 tablespoons plus 2 teaspoons caramel sauce for filling
  • 1 pinch of salt for filling
  • 4 ½ ounces cream cheese (room temperature) for filling
  • 3 tablespoons butter (room temperature) for filling
  • 2 tablespoons brown sugar (light or dark) for filling
  • 2 cups powdered sugar (sifted) for filling
  • ½ teaspoon vanilla extract for filling
  • 1 pinch salt for filling

Instructions

  1. Preheat the oven to 350°F (175°C). In a saucepan, boil apple cider until reduced to 1/4 cup; let cool.
  2. Sift together flour, baking powder, baking soda, salt, and spices in one bowl.
  3. In another bowl, cream together butter and sugars. Add eggs and vanilla, mixing well.
  4. Stir in the reduced apple cider and apple butter/applesauce.
  5. Gradually combine wet and dry ingredients until just mixed.
  6. Scoop dough onto lined baking sheets and bake for 11-13 minutes until set.
  7. Cool cookies before filling with your choice of frosting.
