  • ⅓ cup packed brown sugar (for streusel topping)
  • ¼ cup old-fashioned oats (for streusel topping)
  • 1 teaspoon ground cinnamon (for streusel topping)
  • ¼ teaspoon salt (for streusel topping)
  • ¼ cup cold unsalted butter (cubed, for streusel topping)
  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel topping by mixing flour, brown sugar, oats, cinnamon, and salt with cold butter until crumbly. Refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  5. Gradually combine dry ingredients with milk until just mixed. Fold in diced apples.
  6. Fill muffin cups two-thirds full and top generously with streusel.
  7. Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool before frosting each cupcake with cream cheese frosting.
