  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g unsalted butter or baking spread (softened)
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g unsalted butter (softened)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling and chopping apples, then cooking them with light brown sugar, cornflour, cinnamon, and mixed spice until soft.
  2. Make the crumble topping by combining flour, sugar, cinnamon, and butter until crumbly; bake until golden.
  3. For the cupcakes, cream softened butter with sugar, add eggs one at a time, then fold in flour and spices. Bake until golden.
  4. Once cooled, fill cupcakes with apple mixture and frost with cinnamon buttercream.
  5. Finish off by sprinkling crumble on top.
