  • 1 ½ teaspoons baking powder
  • 1 cup light brown sugar (packed)
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup all-purpose flour for crumble
  • ¼ cup packed light brown sugar for crumble
  • 2 tablespoons granulated sugar for crumble
  • 1 teaspoon ground cinnamon for crumble (optional)
  • 4 tablespoons unsalted butter (melted for crumble)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.

  3. In another bowl, whisk together the dry ingredients for the muffins: flour, baking powder, salt, cinnamon, and nutmeg.
  4. In a large mixing bowl, beat together the sugars and room-temperature butter until fluffy. Add eggs, sour cream (or yogurt), and vanilla; mix well.
  5. Gradually combine the dry mixture with the wet mixture until just combined. Fold in diced apples gently.
