  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (dairy or plant-based)
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Prepare the Apples: Peel, core, and thinly slice the apples. Toss them with granulated sugar and salt; let sit for 15 minutes to draw out juices.
  2. Cook the Apples: In a pan over medium heat, cook the apples until tender but firm (about 15-20 minutes), stirring occasionally.
  3. Make the Vanilla Custard: Whisk egg yolks and sugar in a bowl. Heat milk until steaming; gradually mix with egg mixture. Return to pot and cook over low heat until thickened. Stir in cornstarch mixed with water and add vanilla bean paste.
  4. Assemble: In a mold, layer half of the cooked apples followed by half of the custard; repeat layers finishing with custard on top.
  5. Bake: Preheat oven to 180°C (350°F) and bake for 50-60 minutes until golden brown.
  6. Serve: Allow to cool slightly before slicing into squares and serving.
