  • 1 Tablespoon corn starch
  • 2 Tablespoons water (or more if needed)
  • 4 cups French bread, cut into small ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with parchment paper.
  2. In a saucepan, combine chopped apples, light brown sugar, lemon juice, cinnamon, nutmeg, corn starch, and water. Cook over medium heat until the apples start to soften.
  3. In a bowl, mix cubed French bread with eggs, milk, cream, sugar, vanilla extract, and spices; let soak for 15 minutes.
  4. Prepare the pecan topping by mixing melted butter, maple syrup, and chopped pecans in another bowl.
  5. Fill muffin cavities with soaked bread mixture, pressing gently. Top with apple filling followed by the pecan mixture.
  6. Bake for approximately 22-25 minutes or until golden brown.
