  • 12 thick-cut slices of brioche bread
  • 1 3/4 lb apples (Gala and Granny Smith), peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 3/4 cup brown sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 4 eggs, at room temperature
  • 1 tsp vanilla extract
  • Optional: apple pie spice
  • Optional: turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a saucepan over medium heat, melt the butter, then stir in flour and apple pie spice. Add brown sugar and mix until blended.
  3. Add diced apples and water; cover and cook until apples soften (about 10-15 minutes). Strain excess juices.
  4. In another saucepan, combine milk, cream, butter, sugar, salt, cinnamon, and optional apple pie spice over medium-low heat until smooth. Remove from heat and whisk in eggs one at a time.
  5. Cut brioche into cubes; layer half in the prepared pan followed by half of the apple filling. Repeat layers.
  6. Pour custard over layers; press down gently to soak the bread. Optionally sprinkle turbinado sugar on top.
  7. Bake for 35-40 minutes until golden on top but slightly wobbly in the center. Cool for 10 minutes before serving.
