  • 1/2 cup Olive Oil
  • 2 hefty pinches Kosher Salt
  • 1 hefty pinch Red Pepper Flakes (optional)
  • 1 8 oz block Feta Cheese
  • 1 lb Pasta (such as rotini, orzo, or ditalini)
  • 10 leaves Fresh Sage (minced)
  • 3 cloves Garlic (finely minced)
  • 1 tbsp Hot Honey
  • Fresh Cracked Black Pepper

Instructions

  1. Preheat your oven to 400°F. Toss cubed butternut squash with olive oil, salt, and pepper.
  2. Place the seasoned squash in a baking dish with feta in the center. Drizzle with olive oil and sprinkle with red pepper flakes (optional). Bake for 30 minutes.
  3. Remove from oven, stir gently, increase temperature to 450°F, and bake for an additional 5-10 minutes until feta is golden brown.
  4. Cook your chosen pasta in salted water until al dente; reserve pasta water before draining.
  5. Stir in minced garlic, sage leaves, and honey into the baked mixture before adding drained pasta and one cup of reserved water. Mix gently to combine.
  6. Adjust consistency with more reserved water as needed, seasoning to taste.
