  • 2 large chicken breasts (sliced into thin fillets)
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts into thin fillets and season with salt, pepper, and half the minced garlic.
  3. In a bowl, mix softened cream cheese and heavy cream until smooth. Fold in remaining garlic, onion powder, paprika, Italian seasoning, Parmesan cheese, and half the mozzarella until well combined.
  4. Spread the mixture over the seasoned chicken in a baking dish and top with sun-dried tomatoes.
  5. Cover with foil and bake for 20 minutes.
  6. Remove foil, stir in spinach, and sprinkle remaining mozzarella on top.
  7. Bake uncovered for an additional 10 minutes until the cheese is melted.
