  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. In a bowl, mix balsamic vinegar, olive oil, honey, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Place chicken breasts in a resealable bag or dish; pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (ideally 2 to 4 hours).
  3. Preheat the oven to 400°F (200°C). Line a baking dish with foil or parchment paper and grease lightly with olive oil.
  4. Remove chicken from the marinade (reserve marinade) and place in the baking dish. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C), basting halfway through with reserved marinade.
  5. Let rest for 5-10 minutes before slicing; serve with pan juices.
