  • ⅓ cup unsalted butter (melted)
  • 4 packages cream cheese (8 ounces each, softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies (or sprinkles)
  • Whipped cream (for topping)

Instructions

  1. Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter until combined; press into the bottom of a springform pan to form the crust.
  2. In a mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add sour cream and vanilla; mix well.
  3. Add eggs one at a time on low speed to avoid overmixing. Gently fold in rainbow jimmies.
  4. Pour filling over the crust and bake for about 60 minutes until set around edges but slightly wobbly in center.
  5. Cool in oven with door ajar for about an hour, then chill in refrigerator for at least four hours before serving with whipped cream.
