  • ¾ cup peach preserves
  • ¼ cup apple juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons minced garlic
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets (about pounds, skin on)
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches (pitted, thinly sliced)

Instructions

  1. In a medium bowl, mix together peach preserves, apple juice, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Reserve half for glazing later.
  2. Marinate the salmon fillets in the remaining marinade in a resealable bag for at least 30 minutes in the fridge.
  3. Preheat your oven to 375°F.
  4. Heat oil in an oven-safe skillet over medium-high heat. Add marinated salmon fillets skin side up and sear for about 2-3 minutes until golden brown.
  5. Flip the fillets skin side down and add sliced peaches around them in the skillet; cook for another couple of minutes.
  6. Pour reserved marinade over the salmon and peaches before transferring the skillet to the oven.
  7. Bake for about 12-15 minutes until the salmon reaches an internal temperature of 145°F.
  8. Serve immediately with fresh parsley garnish.
