  • 3 large ripe bananas, mashed, plus 1 halved lengthwise for decoration
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F and grease an 8.5-by-4.5-inch loaf pan.
  2. In a light-colored sauté pan, melt the stick of unsalted butter over medium heat until golden brown; let cool slightly.
  3. In a bowl, mash the ripe bananas and mix in the eggs until well combined.
  4. In another bowl, whisk together flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
  5. Combine the banana mixture with dry ingredients until just mixed; then fold in the melted brown butter.
  6. Pour batter into the prepared loaf pan and place halved bananas cut-side up on top; sprinkle with more dark brown sugar.
  7. Bake for 70 to 80 minutes or until a toothpick comes out clean. Cool slightly before slicing.
