  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  4. In a bowl, combine cherry tomatoes, garlic, basil, balsamic vinegar, olive oil, salt; toss gently.
  5. In the same skillet used for chicken, add cooked pasta and sliced chicken. Top with bruschetta mixture.
  6. Serve warm with grated Parmesan cheese if desired.
