  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese

Instructions

  1. Roast the garlic by placing it in a ramekin with olive oil and salt; cover and bake at 160°C (320°F) for about 2 hours.
  2. Mash the roasted garlic with softened butter and chopped parsley to create garlic butter.
  3. Combine warm milk, active dry yeast, and honey; let it proof for 10 minutes until frothy.
  4. Mix all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and the yeast mixture until a dough forms.
  5. Knead the dough for 15–20 minutes until smooth.
  6. Proof the dough in a warm place for 1 hour and 30 minutes until doubled in size.
  7. Roll out the dough and spread with garlic butter; sprinkle mozzarella cheese on top before rolling tightly into a log.
  8. Cut into six equal portions and let proof again for 30 minutes on a baking sheet.
  9. Preheat oven to 175°C (350°F). Brush rolls with egg wash and bake for 20–25 minutes until golden brown.
