  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 large ripe tomatoes
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat; sauté chicken until golden brown, about 5 minutes per side.
  3. Add minced garlic; cook until fragrant. Stir in sliced tomatoes and oregano.
  4. In a greased baking dish, layer half of the tomato mixture, followed by the chicken and mozzarella cheese. Top with remaining tomato mixture and more mozzarella.
  5. Cover with foil and bake for 25-30 minutes until chicken reaches 165°F (75°C). Remove foil during the last few minutes to brown the cheese.
  6. Let rest for five minutes before serving; garnish with fresh basil and a drizzle of balsamic glaze if desired.
