Ingredients

Scale
  • 200 g grated apples
  • 240 g all-purpose flour
  • 110 g vegetable oil
  • 140 g sour cream
  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 90 g granulated sugar (for caramel)
  • 25 g butter (for caramel)
  • 100 g heavy cream (for caramel)
  • 100 g butter (for frosting)
  • 165 g powdered sugar

Instructions

  1. Start by making the caramel sauce: In a saucepan, combine 90 g sugar and 1 tablespoon water over medium heat until golden brown. Stir in butter, heavy cream, and salt; set aside to cool.
  2. Preheat your oven to 180°C (350°F). Grease a cake pan.
  3. In one bowl, mix together flour, baking powder, baking soda, salt, cinnamon, and all spice.
  4. In another bowl, whisk eggs with both sugars until creamy. Add vegetable oil, sour cream, and vanilla extract.
  5. Gradually incorporate dry ingredients into wet mixture until just combined.
  6. Gently fold in grated apples.
  7. Pour batter into the prepared pan and bake for about 45 minutes or until a toothpick comes out clean.
  8. For the buttercream, beat room-temperature butter with powdered sugar; add cooled caramel sauce and vanilla extract.
  9. Once the cake has cooled completely, spread the caramel buttercream on top and drizzle with additional caramel sauce.
