  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 2 tbsp unsalted butter (for caramel)
  • 1/4 tsp salt (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon; press into the bottom of the prepared pan.
  3. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; set aside.
  4. In a bowl, beat softened cream cheese with granulated sugar until smooth; add eggs one at a time along with vanilla extract.
  5. Spread half of the cheesecake filling over the crust, layer on the apple mixture, followed by the remaining cheesecake filling.
  6. Bake for about 45 minutes or until set; let cool completely before cutting into squares.
  7. Prepare caramel sauce by boiling sugar and water until amber; whisk in heavy cream and butter.
