  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese

  1. Heat olive oil or butter in a large skillet over medium heat. Add sliced onions, salt, and sugar (if using). Cook slowly for about 30-40 minutes, stirring occasionally until golden brown.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Meanwhile, boil salted water in a large pot and cook spaghetti or linguine according to package instructions until al dente. Reserve half a cup of pasta water before draining.
  4. Add drained pasta to the skillet with caramelized onions. Pour in reserved pasta water and sprinkle with Parmesan cheese. Toss everything together until well combined.
