  • 1 (20-ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot. Cook cheese tortellini according to package instructions until al dente.
  2. While the tortellini cooks, prepare the mushrooms and chop the fresh sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add the chopped sage and sauté until crispy.
  4. Add sliced mushrooms and minced garlic to the skillet along with another tablespoon of butter. Sauté for about 5 minutes until browned.
  5. Drain the cooked tortellini and add it to the skillet along with remaining butter and parmesan cheese. Toss gently to coat and season with salt & pepper.
