  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Clean and pierce the potatoes multiple times with a fork, then rub with olive oil and season with salt and pepper. Bake for about 45 minutes until tender.
  3. While baking, cook ground beef in a skillet over medium heat until browned; drain excess fat. Add taco seasoning and simmer for five minutes.
  4. Once potatoes are done, cut a slit in each and gently squeeze open. Fill with seasoned beef and top with shredded cheddar cheese.
  5. Return to the oven for an additional five minutes until cheese melts.
  6. Garnish with sour cream, green onions, tomatoes, olives, and cilantro before serving.
