  • 1 ½ cups brewed espresso (cooled)
  • 7 oz ladyfinger cookies
  • 1 ½ cups cherry preserves
  • Fresh cherries (for garnish)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Gently fold in mascarpone, powdered sugar, and vanilla until smooth.
  2. In another shallow bowl, combine cooled espresso with almond extract (as an alcohol-free option).
  3. Quickly dip each ladyfinger into the espresso mixture and line them at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry preserves and fresh cherries.
  5. Repeat layering with remaining ingredients. Cover and refrigerate for at least six hours or overnight.
