  • 1/3 cup vegetable oil
  • 1 large egg

  • 1 cup pitted fresh cherries (or frozen, thawed and drained)
  • For the Topping: 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients; stir gently until just combined. Fold in the cherries.
  5. In a separate bowl for the topping, mix flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  6. Fill each muffin cup two-thirds full with batter and sprinkle topping over each one.
  7. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for five minutes before transferring to a wire rack.
