  • For Streusel Topping: 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and flouring it.
  2. In a large bowl, whisk together all-purpose flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix granulated sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet mixture with dry ingredients until just blended; avoid overmixing.
  5. Gently fold in the grated zucchini and nuts if using.
  6. Pour the batter into the prepared pan.
  7. For the streusel topping, mix flour, brown sugar, granulated sugar, cinnamon, and cut in cold butter until crumbly; sprinkle on top of the batter.
  8. Bake for 50-60 minutes or until a skewer comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
