  • 3 1/2 lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme and bay leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, render the bacon until golden brown. Remove and set aside.
  3. Season beef with salt and pepper; sear in the same pot until browned on all sides. Remove beef.
  4. Sauté onions and carrots in butter until softened; add garlic and tomato paste. Stir in flour.
  5. Pour in apple vinegar to deglaze the pot, then add beef stock and return seared beef along with herbs.
  6. Cover and transfer to the oven; cook for about 2 1/2 hours.
  7. In a skillet, sauté mushrooms; add pearl onions until golden.
  8. After baking, stir in the sautéed mushrooms and onions; bake an additional 45-60 minutes until tender.
