  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half

Instructions

  1. In a bowl, combine graham cracker crumbs, sugar, and melted butter to form the crust. Press into the bottom of a baking dish.
  2. Beat cream cheese, powdered sugar, and coconut extract until smooth. Fold in Cool Whip and spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened. Pour over the cream cheese layer.
  4. Top with more Cool Whip and sprinkle with toasted shredded coconut. Chill for at least six hours before serving.
