  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • ½ cup butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 oz. cream cheese
  • 3 tablespoons butter
  • ⅔ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a bowl, mix flour, baking powder, cinnamon, cloves, ginger, and salt.
  3. In another bowl, cream butter with brown and white sugars until fluffy.
  4. Add pumpkin puree, egg, and vanilla; mix well.
  5. Gradually combine dry ingredients into the wet mixture until just mixed.
  6. Scoop dough onto a baking sheet and flatten each scoop slightly.
  7. Bake for 10-12 minutes until set but soft.
  8. Cool on a wire rack before icing.
  9. Mix cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Ice the cooled cookies and sprinkle mini chocolate chips on top if desired.
