  • 1/4 cup coconut oil (or substitute)
  • 1/4 cup Greek yogurt or sour cream

  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together pumpkin puree, egg, sugars, coconut oil, yogurt, vanilla, cinnamon, pumpkin pie spice, nutmeg until well combined.
  3. Gently fold in flour, baking powder, baking soda, and optional salt until just mixed.
  4. Spread two-thirds of the batter into the prepared pan.
  5. In another bowl, mix cream cheese with granulated sugar and flour until smooth; pour over batter.
  6. Top with remaining pumpkin batter and smooth gently.
  7. Bake for about 48 minutes or until golden brown; check doneness with a toothpick.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
