  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Prep the Potatoes: Poke each potato with a fork, then microwave for 4 minutes on one side and another 4 minutes flipped.
  2. Prepare for Roasting: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Season Your Potatoes: In a bowl, toss potatoes with olive oil, salt, and pepper until evenly coated.
  4. Smash the Potatoes: Place the seasoned potatoes on the baking sheet and smash each to about 3/8” thick using the bottom of a glass.
  5. Roast: Bake for 6 minutes per side, flipping halfway through until golden brown.
  6. Finishing Touches: Sprinkle with parsley before serving.
