  • 1 and 1/2 pounds boneless, skinless chicken thighs or breasts
  • 34 medium carrots (peeled and chopped)
  • 12 stalks celery (chopped)
  • 1/2 medium onion (chopped)
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or half-and-half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • 2 Tablespoons fresh parsley (flat or curly, chopped)
  • 45 cloves garlic (minced)
  • 1 Tablespoon Italian seasoning
  • salt and black pepper
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • pinch red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Place chicken, carrots, celery, onion, garlic, parsley, Italian seasoning, salt, and pepper in the slow cooker.
  2. Pour in chicken stock or broth and stir gently to combine.
  3. Cover and cook on low for 6-8 hours or high for about 4 hours.
  4. After cooking, shred the chicken directly in the slow cooker.
  5. Mix cream with cornstarch until smooth; add to soup along with gnocchi and spinach. Stir well.
  6. Cook on high for another 30-45 minutes until gnocchi is tender.
  7. Adjust seasonings to taste before serving.
