1 ½ cups graham cracker crumbs
1 cup all-purpose flour
½ cup granulated sugar (for crust)
½ teaspoon salt
¾ cup unsalted butter, melted
16 oz full-fat cream cheese, softened
½ cup granulated sugar (for filling)
2 large eggs
1 tablespoon lemon zest
¼ cup fresh lemon juice
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
In a bowl, mix graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until combined.
Press two-thirds of the crumb mixture into the bottom of the prepared pan.
In another bowl, blend cream cheese until smooth; add sugar gradually, followed by eggs one at a time. Mix in lemon zest, juice, and vanilla until well combined.
Pour filling over the crust and sprinkle remaining crumb mixture on top.
Bake for 30–35 minutes or until slightly jiggly in the center. Cool at room temperature before refrigerating for at least three hours.
