  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk for dairy-free)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange halved tomatoes on a lined baking sheet; drizzle with olive oil and season with salt and pepper.
  3. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and place on the baking sheet.
  4. Roast everything for 30-35 minutes until tomatoes are caramelized and garlic is soft.
  5. In a pot over medium heat, warm olive oil and sauté chopped onion until translucent (about 5 minutes).
  6. Squeeze roasted garlic into the pot, add tomatoes, broth, and basil; stir well.
  7. Blend the mixture until smooth using an immersion blender.
  8. Return to low heat and stir in heavy cream (or coconut milk); let it simmer for another 5-10 minutes.
  9. Serve warm, garnished with fresh basil or a drizzle of cream.
