  • 34 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or coconut cream for vegan)
  • 2 cups organic vegetable stock
  • 4 Tbsps tomato paste
  • Sea salt and spices (On Everything All-Purpose Blend, smoked paprika)

Instructions

  1. Preheat oven to 400°F (200°C). Arrange tomato wedges and whole garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for about 30 minutes until tender.
  2. In a large pot, sauté chopped onions over medium heat until translucent.
  3. Remove roasted tomatoes and garlic from the oven; squeeze softened garlic into the pot with onions. Add vegetable stock and tomato paste; simmer for 10 minutes.
  4. Blend the mixture until smooth. Stir in heavy cream (or alternative) and seasonings; simmer for an additional 5 minutes.
  5. Serve warm, garnished with fresh basil or a drizzle of olive oil.
