  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or coconut cream for vegan)
  • 2 cups organic vegetable stock
  • 4 Tbsps organic tomato paste
  • 1 tsp sea salt (plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange tomato wedges and whole garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for about 30 minutes until soft and caramelized.
  2. In a pot over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes).
  3. Squeeze roasted garlic into the pot, add roasted tomatoes, vegetable stock, and tomato paste. Simmer for 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream (or coconut cream), smoked paprika, and seasoning to taste.
  6. Serve hot alongside grilled cheese sandwiches or crusty bread.
