  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sesame oil
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 avocado, sliced

Instructions

  1. Press extra-firm tofu to remove moisture, then cut into cubes.
  2. In a bowl, mix cornstarch, flour, garlic powder, salt, and pepper. Coat tofu cubes in the mixture.
  3. Heat oil in a skillet over medium-high heat and cook the coated tofu until golden brown (about 10-15 minutes).
  4. In another bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and sesame oil to make the teriyaki sauce.
  5. Cook brown rice in vegetable broth according to package directions (about 15-20 minutes).
  6. Assemble by layering brown rice, sliced avocado, crispy tofu cubes, and drizzle with teriyaki sauce.
