  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for about 15 minutes. Blend them with onion, garlic, and diced tomatoes until smooth.
  2. Place the beef chuck roast in the Crock Pot and pour the chili mixture over it. Add beef broth along with any desired seasonings.
  3. Cook on low for 8-10 hours until the beef is tender enough to shred easily.
  4. Shred the beef in the sauce for added flavor.
  5. Fry corn tortillas until crispy, then fill them with the shredded beef mixture and top with cilantro and onions.
