  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. Gradually incorporate flour, salt, and baking powder until just mixed.
  5. Using a cookie scoop, form nine equal balls of dough on the prepared baking sheet, flattening them slightly.
  6. Bake for about 8-9 minutes until lightly golden around the edges. Cool before transferring to a wire rack.
