  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F.
  2. Layer sliced potatoes and onions in a greased baking dish.
  3. In a saucepan, melt butter, whisk in flour, then gradually add almond milk until thickened.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until smooth.
  5. Pour the sauce over the potatoes and cover with foil.
  6. Bake for 45 minutes, then remove foil and add gruyere and parmesan on top.
  7. Bake uncovered for another 30-45 minutes until golden brown.
  8. Garnish with parsley before serving.
