  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • 8 oz mozzarella pearls
  • ½ cup pepperoncini, sliced
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook rotini pasta according to package directions; drain and let cool.
  2. In a bowl, whisk olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper for the vinaigrette.
  3. Chop turkey slices and pepperoni; prepare remaining ingredients: halve tomatoes and olives.
  4. In a large bowl, combine cooled pasta with chopped ingredients; drizzle with dressing and toss gently.
  5. Chill in the fridge for 30 minutes before serving.
