  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup cold butter, cubed
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4 inch bread pans.
  2. In a large bowl, combine flour, salt, baking soda, and spices.
  3. Mix in granulated sugar and brown sugar until well blended.
  4. Create a well in the dry mixture and add oil followed by the eggs one at a time, mixing gently after each addition.
  5. Stir in pumpkin puree, water, and vanilla extract until just combined.
  6. Divide batter evenly between the prepared pans.
  7. For the crumb topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle over the batter.
  8. Bake for about 55 to 65 minutes or until a toothpick comes out clean.
  9. Cool in pans for ten minutes before transferring to a wire rack.
