1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 can (14 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon soy sauce
1 onion, diced
2 garlic cloves, minced
1 red bell pepper, sliced
Juice of 1 lime
Fresh cilantro for garnish
Instructions
Prep your ingredients: Dice onion and garlic, slice bell pepper.
Combine chicken breasts, chicken broth, coconut milk, red curry paste, soy sauce, diced onion, minced garlic, and sliced bell pepper in the slow cooker.
Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
Shred cooked chicken with two forks and return it to the soup. Stir in lime juice and garnish with fresh cilantro before serving.
