  • 1 lb ground turkey sausage
  • 5 cups chicken stock
  • 1 cup coconut milk
  • 2 cups chopped fresh kale
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large stockpot over medium-high heat, cook the ground turkey sausage until browned and fully cooked. Break into small pieces while cooking.
  2. Remove the sausage using a slotted spoon, reserving 1 tablespoon of grease in the pot. Discard excess grease.
  3. Add diced onions to the pot and sauté for about 5 minutes until soft.
  4. Stir in minced garlic and sauté for another minute.
  5. Add diced potatoes, chicken stock, and cooked sausage back to the pot; bring to a simmer.
