  • 1 1/2 lbs Yukon Gold potatoes (diced)
  • 1 lb ground turkey sausage
  • 5 cups chicken stock
  • 1 cup heavy whipping cream
  • 2 cups chopped fresh kale
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper to taste

Instructions

  1. Cook ground turkey sausage in a large stockpot over medium-high heat until browned. Remove and set aside.
  2. In the same pot, sauté diced onions in reserved grease for about five minutes. Add minced garlic and cook for another minute.
  3. Stir in diced potatoes, chicken stock, and cooked sausage. Bring to a simmer.
  4. Reduce heat to medium-low and simmer for ten minutes until potatoes are tender.
  5. Mix in chopped kale and heavy cream; simmer for an additional five minutes.
  6. Season with salt and black pepper to taste before serving warm.
