  • 4 large Yukon Gold potatoes
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs
  • Extra Parmesan cheese
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat until golden brown (15-20 minutes).
  2. Add garlic powder, thyme, and broth; simmer for 5 minutes.
  3. Grease a baking dish and layer half of the potato slices, followed by half of the onion mixture and half of the cheeses. Repeat layers.
  4. Whisk together cream, salt, pepper, and thyme; pour over layered bake.
  5. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake an additional 15-20 minutes until golden.
