  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Pâte Sucrée dough and cut into 12 portions. Press each into tartlet pans and freeze for 15-30 minutes.
  2. Preheat oven to 375°F.
  3. Prick holes in the chilled shells, line with parchment paper, add weights, and bake for 10-15 minutes until edges brown.
  4. Make strawberry jam by combining chopped strawberries and sugar in a saucepan over medium heat until thickened.
  5. For pastry cream, heat sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks with cornstarch, temper with warm milk, then cook until thickened.
  6. Chill pastry cream for about two hours.
  7. Assemble by spreading strawberry jam in each shell and piping on chilled pastry cream, garnishing with fresh strawberry halves.
