6 large eggs
1/4 cup milk
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped zucchini
1/2 cup chopped mushrooms
1/4 cup chopped spinach
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat the oven to 375°F (190°C).
In a medium bowl, whisk together eggs, milk, Parmesan cheese, salt, and black pepper until blended.
Heat olive oil in an oven-safe skillet over medium heat. Sauté onion and bell pepper until softened (about 5 minutes). Add zucchini and mushrooms; cook for another 5–7 minutes.
Stir in spinach until wilted.
Pour the egg mixture over the vegetables and gently stir.
Bake in the preheated oven for 15–20 minutes until set and lightly golden.
Allow to cool slightly before slicing into wedges.
