  • 1 large yellow onion, chopped
  • ½ tsp sea salt
  • 1 butternut squash, peeled, seeded, and cubed
  • 3 garlic cloves, chopped
  • 1 tbsp fresh sage, chopped
  • ½ tbsp rosemary, minced
  • 1 tsp fresh ginger, grated
  • 34 cups vegetable broth
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sea salt; sauté for 5–8 minutes until soft.
  2. Stir in the cubed butternut squash and cook for another 8–10 minutes until lightly browned.
  3. Add garlic, sage, rosemary, and ginger; cook for 30–60 seconds until fragrant.
  4. Pour in vegetable broth; bring to a boil. Reduce heat to low; cover and simmer for 25 minutes until squash is tender.
  5. Allow to cool slightly before blending until smooth. Adjust consistency by adding more broth if needed.
  6. Season with black pepper and serve hot topped with parsley and toasted pepitas.
