  • 42g unsalted butter
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)

Instructions

  1. In a wide pot, bring chicken broth and salt to a boil.
  2. Add cauliflower florets, reduce heat to low, cover, and steam for about 20 minutes until fork-tender.
  3. Using a slotted spoon, transfer the steamed cauliflower to a food processor.
  4. In the same pot, whisk together 3 tablespoons of hot broth with cubed butter until smooth.
  5. Pour the buttery mixture into the food processor along with chopped thyme and black pepper; blend until completely smooth.
  6. Adjust consistency with additional warm broth if necessary.
  7. Serve warm as an elegant side dish.
